Amaro - Dell'Erborista



There are many ways to bring a dinner to a close. A new arrival and a personal favorite of my own is the Amaro dell'Erborista produced by Varnelli, a Marchesi Distillery founded in 1868. 





Amaro literally means "bitter." The catagory Amari is an umbrella which includes any wine or liquor base which has been infused with an bitterant. Traditionally, the root of Gentiana Lutea is used. Other commonly used ingredients are orange peel, clove, cassia bark and honey. Depending on the style of Amaro produced, the bitterness and flavoring will vary widely.

 Amaro Dell'Erborista is made unique by the focus placed on the honey (sourced from the Sibillini Mountains nearby the distillery) used to sweeten and the gentian root used to imbitter it. It is very bitter. It is also unfined an unfiltered, with a cloudy amber color. The flavor is elegantly composed, delicate notes of orange peel and honey are neatly framed by its bitter texture. 

This is the epitome of Amari, a refreshing and traditional high note to the cessation of dinner at Altura.
